Smoking Omelets:

Who doesn’t love a good omelet in the morning? It’s a great way to start the day! Few things go together better than eggs and cheese and there are so many things you can put into them to make them extra yummy! The most important part of cooking a good omelet is the timing, so pay close attention the whole time you’re cooking. I think of Omelets are like salad. There is really no set list of ingredients: Ham and cheese, Spinach and Mushroom, Tomato and cheese, just plain cheese, lots and lots of cheese…but try adding whatever you like. As I’m sure you can guess I like to add different kinds of cheese. There are many great combinations and these three are just a few of my favorites!
Ingredients:
· Two or three large fresh Eggs.
· 1 half-cup of milk.
· One pat of butter or margarine.
· Salt and Pepper.
· Optional: 2 good size Slices or shredded cheese of your choice. I like Pepper Jack or Cheddar. Parmesan is really nice too!
Omelet Super Stuffing Options:
· Four cherry tomatoes. Washed and Quartered.
· Three sliced Shitake mushrooms.
· A hand full of spinach leaves washed and ripped into small pieces.
· One small ripe avocado, cut into slices.
· Some alfalfa sprouts.
To Cook:
Start by beating your eggs in a mixing bowl and stir in your milk till it’s a nice pale yellow color.
The first thing you need to do to make a good omelet is get a fry-pan going on high heat and add the pat of butter~ After the butter melts bring it down to a medium heat and add your quartered tomatoes or mushrooms~ Cook for a min or two, keep from burning or sticking to the pan~ Next add the egg and milk mix and let it fill in the gaps around the mushrooms and tomatoes~ Cook for about 2-3min~ Next add your avocado and spinach and cheese of your choice~ Lightly salt and pepper~ Timing is key in the next step so keep an eye on your fry-pan~ Just let the omelet cook for a few min~ Using your spatula lift the bottom to make sure it doesn’t get stuck to the pan~ When the omelet is cooked on one side flip it with the spatula to make a half-moon shape~ Cook for another min or two~ The longer you cook the more well done the omelet will be, just make sure you keep an eye on it so it doesn’t burn. Before serveing top it off with some fresh alfalfa sprouts.
Serve it with a cup of hot coffee and some sliced apples, bananas or oranges and a big slice of homemade bread draped with cream cheese. Or if you’re really hungry, some hashed potatoes! Some people like to eat their omelet with Ketchup, I prefer South West Ranch Dressing! Deadly and delicious! Enjoy!!
