Party Potatoes!

Party Potatoes:
Cooking time: 45min-1hour.
Serves: 6

Growing up in the Midwest pretty much means your dinner table always has two things on it, meat and potatoes. Well, at least it was that way in my house. Like all Midwestern families, our family has got loads of potato dish recipes, too! This one is easy and delicious and a great side dish for roast chicken or turkey. It’s pretty easy to polish off a plate of these guys, but be careful with this one or you’ll be packing on the pounds!

Ingredients:

· 8-10 Potatoes.
· 1 cup of sour cream
· 1 8oz. package of cream cheese (at room temperature)
· 1 tsp of onion salt
· 1 tsp of garlic salt
· Powdered Paprika
· Butter

To Cook:

Preheat oven to 350F or 176C. Get yourself a big mixing bowl and a nice sized casserole pan.

First get a large pot of water going to a full boil (add a little salt to the water. It helps it boil faster and adds to the taste of the potatoes.) ~Then wash and peal your potatoes~ Cube and drop your peeled potatoes one into the pot and let them boil on a low heat until soft~ In the mixing bowl beat the sour cream and cream cheese until blended~ Drain the water from the boiled potatoes~ Gradually stir the potatoes mixing and mashing them into a nice creamy mixture adding the garlic salt and onion salt as you go~ Add the mixture to a casserole pan and even it out~ dot the top of it with a few splotches of butter and sprinkle with paprika~ Bake in the oven for 45min.

Goes great as a side dish with roasted turkey, chicken, or a smoked ham! This one never failed to make an appearance on our dinner table every Thanksgiving, Easter or Christmas! Thanks Aunty Sandy for the Recipe!

Aunty Sandy’s tip: Back it over night and refrigerate it to save time preparing for the party the next day.
